PRODUCTION AREA: Rocca Massima (LT) – Cori (LT)
ALTITUDE: 450 a.s.l.
VARIETY: 100 % Itrana
SOIL TYPE: rocky, calcareous
PLANT BREEDING: multi-branched vase
PICKING: late picking during the months of January/February
PICKING METHOD: stripping with combs and mechanical help
PRESERVATION AND TRANSPORTATION: in pierced containers to allow olive ventilation
MIXER : within 24 hours from picking in our mill/grinder
PROCESSING: defoliation and washing, machine mill-mixer, 45/60 minutes breaking and extracting with 3 phase-spinner
YIELD: from about 13% to 18%
STORAGE: stainless steel under controlled temperature, cool place (15/18°) away from heat and light. Natural decanting of oil without any sort of filtering.
GASTRONOMY: The main feature of this oil is that it is a “light”oil particularly indicated for cooking and for preparation of sauces and dressings, excellent for frying, it offers a great crispness and genuiness, that only an extra-virgin can offer.
CERTIFICATION: Traceability C.S.Q.A. UNI EN ISO 22005:2008
ORGANOLEPTIC EXAM: Intense, surprisingly fruity and sweet smell. It well expresses matured almonds flavorings, slightly bitter with a delicate spicy after-taste.
